Soy milk shares the 7-10 day opened fridge window common to plant milks on this site, a timeline driven mostly by exposure to air and bacteria once opened rather than by protein content, even though soy milk's protein level is meaningfully higher than a nut-based milk's.

That higher protein content does show up differently at the spoilage stage, though — soy milk that's starting to turn tends to develop small visible curd-like flecks before it smells noticeably sour, a texture cue worth checking for specifically since it can appear slightly earlier than the sour smell that's usually the first sign in a lower-protein plant milk like almond milk.

Pouring soy milk into very hot coffee and seeing it curdle immediately isn't necessarily a sign the carton has spoiled — that reaction can happen with a perfectly fresh carton if the coffee is hot and acidic enough, a heat-and-acid reaction distinct from the curdling caused by actual bacterial spoilage, which shows up regardless of what the soy milk is poured into. Soy milk fortified with added calcium and vitamins, common in most commercial cartons, doesn't spoil any faster or slower because of that fortification — the added nutrients don't meaningfully change the underlying bacterial growth conditions that govern the standard 7-10 day opened window. A carton opened for one recipe and then mostly untouched for the rest of the week, common for a household that only occasionally bakes with soy milk, is worth writing the open date on with a marker — plant milk cartons don't always make it obvious at a glance how many days have already passed since opening.
