How Long Does Rolled Oats Last?

Rolled oats' shelf life at room temperature, 12-18 months in a sealed container, is driven by the same slow oxidation of natural oils that affects other whole-grain products, just at a gentler pace than a more oil-dense product like whole wheat flour or brown rice.

A rancid, slightly sour or bitter smell replacing oats' normal mild, faintly sweet scent is the clearest sign a container has turned, and it's worth checking a container that's been open a long time even if it looks and pours normally, since rancidity doesn't necessarily change oats' appearance. Small moving insects or fine webbing are a separate, unrelated concern, more common in oats stored loosely in a warm pantry rather than a sealed container in a cool spot.

Oats bought in a resealable pouch inside a cardboard canister, the common commercial packaging, hold up about as well as oats transferred to a separate airtight container, as long as that inner pouch is properly resealed after each use — the cardboard outer canister itself offers little protection on its own against air or humidity.

Instant oats, more processed than traditional rolled oats, have even more exposed surface area and can turn rancid somewhat faster as a result — checking a container of instant oats a bit more proactively than a container of traditional rolled oats is a reasonable extra precaution.
