How Long Does Potatoes (Whole) Last?

Whole raw potatoes, stored in a cool, dark, well-ventilated spot rather than the fridge, keep remarkably well, often 3-5 weeks, since their thick skin and low moisture content resist spoilage far better than most vegetables — refrigeration actually works against potatoes, since cold temperatures convert their starch to sugar the same way accidental freezing does.

Sprouting eyes and a greenish tinge to the skin (from light exposure, producing a compound called solanine) are the two signs to actually watch for — a few small sprouts can be cut away from an otherwise firm potato, but a potato that's gone soft, wrinkled, or has spread significant green coloring should be discarded rather than trimmed, since solanine can extend beyond the visibly green area.

Potatoes and onions, despite often being stored in similar cool, dark pantry spots, shouldn't actually be kept right next to each other — onions release gases that can speed up potato sprouting, so keeping the two in separate bins or bags, even within the same general storage area, helps each last its full window.

A potato stored in a bin with good airflow, rather than a sealed drawer, is less likely to develop the trapped moisture that speeds up both sprouting and rot, one more reason ventilation matters as much as darkness for potato storage.

A potato stored away from direct light, even indirect daylight through a window, avoids the greening that direct or indirect light exposure can trigger over time, a separate concern from simple temperature or humidity.
