Fresh cod's flesh should look translucent and slightly pearlescent, not the flat, chalky, opaque white that develops as it starts to turn — that shift in appearance is often visible before any smell develops, making it a useful first check when buying from a counter rather than a sealed package. A clean, mild ocean smell is normal; a sharp, sour, or distinctly ammonia-like odor means the fish has moved past its short 1-2 day fridge window regardless of how it looks.

Texture is the other reliable check — fresh cod springs back gently when pressed, while fish that's turned leaves an indentation or feels noticeably softer and wetter than it should. Because cod is such a lean fish, it doesn't develop the rancid, oily off-smell a fattier fish like salmon does when it spoils; the ammonia note is the dominant warning sign to trust here instead. Storing it on ice in the coldest part of the fridge, rather than a middle shelf, helps it reach the full length of that short window.

Cod sold frozen at the store and thawed at home for a same-day meal follows the same 1-2 day post-thaw fridge window as fish that started fresh, since thawing effectively resets the clock regardless of how the fish got to that point. A cod fillet that's been sitting in its own liquid at the bottom of the package, rather than on a paper towel to absorb excess moisture, tends to develop a slightly stronger smell a bit sooner, which is worth knowing when judging freshness by smell alone.
