Wilted, limp leaves and yellowing at the edges are the earliest signs of decline, appearing faster on arugula than on a heartier green. A slimy texture, dark wet spots, and a sour smell replacing arugula's normal peppery, slightly bitter scent are the signs it's actually spoiled — because arugula's leaves are thin and bruise easily, gentle handling when storing it genuinely extends how long it stays presentable within that short window.
Arugula sold pre-washed in a sealed clamshell container generally has a printed use-by date that reflects careful commercial handling, and that date tends to be a fairly reliable guide for this particular green given how consistently it's processed, compared to loose arugula sold without any date reference at all.
A container of arugula that smells faintly sulfurous even before any visible decline is often a sign it's close to the end of its window, since that smell tends to develop a bit before the leaves show obvious wilting or sliminess.
A container lined with a dry paper towel absorbs excess condensation and can buy arugula an extra day or so before wilting sets in.
