Coconut milk already separates somewhat even unfrozen, which takes some of the sting out of the fact that freezing (2 months) makes that separation more pronounced — a can that's been frozen and thawed just needs a more thorough stir or shake before use in a curry or soup than an unfrozen can would. Its relatively short 4-6 day opened fridge window is what actually makes freezing worth considering here, more so than for a shelf-stable pantry item with a longer runway to begin with.

Freezing leftover coconut milk in an ice cube tray, then transferring the frozen cubes to a bag, is a genuinely useful habit specifically because so many recipes call for less than a full can — a couple of cubes dropped straight into a simmering curry or soup skips the need to fully thaw first, and the extra separation freezing causes barely matters once it's melting into a hot, already-simmering liquid anyway.

A whisk or immersion blender brings a thawed can back to something close to its original texture for most cooking uses, though it's worth not expecting a fully thawed can to whip the same way a fresh, unfrozen high-fat can does for a dairy-free whipped topping — that specific use benefits from starting with fresh, unfrozen coconut milk chilled overnight rather than a previously frozen can. A can specifically labeled "lite" or reduced-fat behaves similarly in the freezer to a full-fat can, separating on thawing in the same general way, though its thinner starting consistency means the post-thaw separation can look slightly less dramatic simply because there was less fat present to separate out in the first place.
